In twee woorden, hun technieken vervoegen elkaar.

Henri Gault.

Abbaye des Collonges

Wednesday 2 September 2009

Here is at last an instrument that depicts the exceptional taste of Paul Bocuse for all that is great: this big Gaudin mechanical pipe organ, built in 1900 for a concert hall in Thiers (France), was favoured by our friend Paul. This beautiful organ was restored and renovated in two years of hard work by his friend Marc Fournier. This unique piece is certainly worth a visit because it is so spectacular and one can better appreciate the affection of “Bocuse, Chef de cuisine” for this organ, which produces a gamut of notes as he makes sauces, sweet and bitter nuances of sound, can appear as soloist or as leader of the orchestra, just like Bocuse: the delicate cook of a bistro or the big chef of a banquet of the century. In two words, their techniques conjugate each other.

I would not be surprised if Bocuse one day writes recipes on a staff with round notes and crosses, but while anticipating this you should certainly listen to the breath of the greatest cook of the world in the pipes of his organ Gaudin, of which the soft and flamboyant music would have enchanted the children of paradise, if they had been lucky enough to meet with him.

Henri Gault
